Chocolate Chip Banana Muffins


These chocolate chip banana muffins are the best treat when you need a chocolate fix. I make our favorite banana bread often when we have bananas starting to go bad, but occasionally we like to switch it up with an extra indulgent treat and the kids cannot get enough of these!

-Makes 12 muffins-


Ingredients:

  • 6 tbsp unsalted butter, melted

  • 3/4 cup brown sugar

  • 1 large egg

  • 1 tsp vanilla

  • 3-4 ripe bananas (mashed)

  • 3/4 cup cocoa

  • 1 cups flour

  • 1 tsp baking soda

  • 1 tsp baking power

  • 1 tsp cinnamon

  • 1/2 tsp of salt

  • 3/4 cup of dark chocolate chips + more for topping

    Directions:

  • Preheat oven to 350 degrees and line a standard 12 cup muffin tin with paper liners.

  • In a large bowl, whisk together sugar, butter and egg.

  • Add mashed bananas and vanilla to the mixture.

  • Add in flour, cocoa powder, baking soda, baking powder, cinnamon, and salt and mix just until combined.

  • Gently stir in chocolate chips.

  • Pour the mixture evenly in to the 12 muffin cups. Top each muffin with a few chocolate chips.

  • Bake 15 to 20 minutes. Test with a toothpick and when it comes out almost clean, they are ready!

  • Remove muffins from the pan and enjoy!
