Classic Lasagna

Lasagna


Lasagna is a favorite meal in our household. As the weather cools off, we love a cozy Sunday evening lasagna. I’ve tried many recipes and finally feel like I have perfected this. It is easy enough to throw together and so delicious. My kids love to help make this and it is the ultimate comfort food!

Tip: You can make this early in the day and stick in the refrigerator (covered with foil) to cook for dinner. I also like to make this if we are going to be out of town and leaving kids with grandparents or a babysitter. I think it’s comforting for them to have a homecooked meal while we are away, and so helpful to whoever is watching them! I store it uncooked in the freezer, covered with saran wrap and a lid. Then, it can be taken out to thaw in refrigerator for the day and baked per normal instructions.


Ingredients:

  • 1.5 lbs of ground beef

  • 1/2 small white onion (diced)

  • 2 cloves of garlic (minced)

  • 1 tbsp olive oil

  • 1 28 ounce can of crushed tomatoes

  • 1 6 ounce can tomato paste

  • 2 tsp of salt

  • 2 tsp Italian seasoning

  • 1/2 tsp of pepper

  • 1/2 tsp of red pepper

  • 1 pkg of lasagna noodles

  • 1 cup of shredded mozzarella cheese

  • 12 oz of ricotta cheese

  • 1/4 cup of grated parmesan cheese

  • 6 thin slices of mozzarella cheese

    Directions:

  • In a large, non stick skillet heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes. Then add your ground beef and cook stirring often to crumble. Drain excess fat.

  • Next, add your onion, tomato paste, tomatoes and all seasonings. Bring contents to a boil, then reduce heat to a simmer and cook stirring occasionally for 20-30 minutes.

  • While this is simmering, cook your lasagna noodles per package instructions.

  • In a medium sized bowl, combine your shredded mozzarella, ricotta and grated parmesan cheese.

  • Once your lasagna noodles are cooked, pour into a strainer and run under cold water until noodles cool enough to hold.

  • Lightly grease a 9x13 baking dish and begin layering your lasagna: place noodles in the bottom of the dish slightly overlapping, lengthwise. Next spoon half of the beef mixture over the noodles, following with half of the cheese mixture. Repeat this layer. Top the casserole with one more layer of noodles, then your 6 slices of mozzarella cheese.

  • Bake your lasagna at 350 degrees for 30 minutes.
